Ernst Knam was born in Germany, but has an Italian soul. After Ernst finished his education at the Gualtiero Marchesi's court, he began a solo career at Antica Arte del Dolce, close to Milan. Here he acquired 25 years of experience and traveled to learn as much as possible. Ernst is passionate about using different spices, fruit, fragrance and color in his confections.
