Flexible silicone ganache pan is conveniently sized for most guitar cutters. Chocolatiers and pastry chefs use this Silpat® Entremet to mold ganache, cakes and other foods for quick and easy transfer to their guitar cutter.
Made by well-known French manufacturer, Sasa Demarle, the FT-04020 silicone Entremet pan features their signature reinforced mesh fiberglass on the outside for extended durability and longer use, maximum heat transfer, even browning, and ultimate demolding, and perfectly smooth on the inside.

To clean this Silpat® FT-04020 entremet and other Flexipans, simply immerse the pan in warm soapy water and clean with a soft sponge. To dry it: leave in a 212° F (100° C) ventilated oven for 2 to 3 minutes.
