Batch tempering systems are popular for tempering single batches of tempered chocolate and for controlling the quantity of ingredients added to each batch. Automatic batch tempering machines have on-board cooling systems that take the chocolate through the tempering curve to crystalize it, using refrigerant gas with a compressor or water through a water jacket. Chocolate is tempered in a "batch" based on the tank size. Another key feature of batch tempering machines is that they can be cleaned relatively easy with hot water and can easily accommodate the change-over of one chocolate to another.
