Silpat® Entremet Pans

Versatile silicone pans can be used in the oven or freezer to create individual layers or interesting multiple layered desserts. Made in France using the highest grade of silicone and backed with a fiberglass mesh for increased longevity, Silpat® Entremet pans allow you to make beautiful sheet cakes and pastry logs with ease. Hundreds of pieces can be produced by laying up your design and then cutting on a guitar cutter. For example: Make a layered sponge cake and jelly dessert by pouring a layer of jelly onto a layer of frozen crème brulee, then place a sponge cake on top to set and freeze. De-mold and cut then top with a powdered sugar or brown sugar mixture. Voile! ---To clean: Iimmerse in warm soapy water and clean with soft sponge. Dry in 212° F (100° C) ventilated over 2-3 minutes.
