The Kleego can be ordered in 2 capacity bowl configurations: 50 kg and 100 kg. The process of conching in the FBM Kleego is relatively fast. Depending upon your quantity of chocolate liquor, the conching process can take from 1 hour to several hours. The purpose of conching chocolate liquor is to remove unwanted acids and further develop the flavor profile of your chocolate that is made from the bean.
