Chocolate tempering is made simple in the Rev 5 with electronic controls that can be operated in various modes to melt & temper 3 - 10 lbs. of chocolate at a time with an extended tempering timeframe of 15 hours or more, and daily output of ~100 lbs. per day. Or, if using the included holey baffle, you can melt and temper up to 17 lbs. of chocolate at one time.
