The FBM UNICA 40 features a true three-zone tempering system for more precise control over the tempering curve and has recently been upgraded with a 40 kg capacity bowl. Made for moderate to high production volumes, the UNICA 40 tempering machine is a cost effective workhorse for Chocolatiers and Chocolate Makers.

The UNICA is made for chocolate bar moulding and enrobing (optional enrobing belt). It uses an auger driven chocolate delivery system, originally developed by FBM and since further improved, whereby more chocolate is exposed to the cooling tube for better distribution of crystals. The auger is automatically reversible and can be removed to facilitate cleaning of the machine.
The UNICA's dedicated CPU monitors and adjusts heating and cooling automatically within a narrow range of set melting and tempering points to maintain automatic continuous tempering. Utilizing 3 zone tempering, the chocolate melting bowl is heated by the bain-marie method (water jacket); the tempering pipe is cooled by refrigerant gas; and chocolate moving from the tempering pipe is warmed with thermo-resistive wire. This combination delivers fast response times, precise control, and reduced energy consumption.

The Unica's standard configuration includes a removable vibrating table, removable tempering auger, and pedal-operated electronic depositor with user selectable time and repetitions (up to 9) for filling moulds and other uses. Set up and save individual tempering curves for the different chocolates used and/or set up a weekly schedule.
Plus, this moulding machine provides a platform which can be expanded to enrobing, pneumatic dosing and automatic mold loading utilizing the flood/scrape technique or the depositor.
