Table Top Chocolate Melters and Temperers
Table top chocolate melters and tempering machines are designed to melt and temper smaller quantities of couverture chocolate, maintaining the characteristics of your chocolate. Table top melters come in a variety of sizes.
MOL D'ART melters use a dry radiant heat encased in a strong yet light weight polymer base, with food grade stainless steel pans. Select from four (4) sizes: 3 kg, 6 kg, 12kg, and 24kg. The heating device is mounted on both the bottom and sides for gentle and even heating. Temperature is electrically controlled with a control dial. All models come with a polymer lid.
KREA SWISS melters are 100% stainless steel, including the lid. These chocolate melters also use a heat blanket for even heat distribution. The temperature is controlled with a digital control panel and a temperature probe is mounted inside the pan to measure the temperature of your chocolate. Two (2) models are available: 6kg and 20kg. The 6kg may be too narrow to dump molds if shell moulding. Also, cooling can take longer unless the pan is removed from the stainless steel heating system.
DR provides an all stainless steel chocolate melter that uses a water jacket, or Bain Marie, heated system for even heat. It comes in one size, 20kf and like the Krea Swiss table top melters, requires more time for cooling unless removed from the water bath.
CHOCOVISION table top melters are designed to temper chocolate per batch. They come in a variety of sizes to accommodate 1.5 lbs. of chocolate to 45 lbs. Because of the constant agitation to bring the chocolate to temper, it will not hold temper as long as models that require manual tempering but is ideal for those working with batch quantities or for those who are not accustomed to manually tempering chocolate.
