Continuous Tempering with Depositing, Enrobing Options
Automatic continuous tempering machines that use an auger pump technology to circulate chocolate through heating and cooling zones produce evenly tempered chocolate without any over crystallization common in traditional batch tempering machines. The auger pump facilitates the molding / dosing capabilities of these machines which come standard with time based dosing and vibration tables. Some of the machines can be equipped with depositing heads that fill all cavities of the mold (or mould) in one deposit. Additionally, most of the machines can be equipped with an enrobing line that is fitted by removing the standard vibration table.
