TCF Sales offers a variety of candy cooking and mixing equipment used to make caramel, toffee, fudge, and similar confections. Beginning with a gas or electric stove and one or more copper or stainless steel kettles, customers can cook and hand mix their ingredients using wood or stainless steel paddles. As output needs increase, customers use contained stainless steel bain-marie type cookers that mix and control the temperature and achieve more consistent batch results. Agitators move ingredients to prevent burning and temperatures are digitally controlled. When set points are reached, water flushes the contained water jacketed space to discontinue cooking at the precise time. Customers can add a depositing or metering pump to transfer food from one work station to another or use a lift ruck to move food in kettles.
Candy and confections can be poured onto cooling or heating tables that come in a variety of sizes to extend working times. Roller cutters and drum rollers can be custom designed or purchased in a standard configuration ordered to accommodate your table size and can be conveniently stored beneath your table on an attached rack.
