Very well constructed and sturdy. I use it to cut Pate Def Fruit which it slices with ease. My only minor issue is the lack of a 3rd supporting wall for the confections (This model has two) which would go a long way to prevent distortion when cutting treats. As it stands, I buttress the 3rd side with a board as I slice and this adequately prevents distortion. Would highly recommend the machine overall. It can even slice through much denser material like fruit and nut bars if you use the thicker gage wire.

This cutter is a must for a growing pastry kitchen. We're using it for candy production and it is exactly what we needed for cutting our gummie candy. We did end up changing the gauge wire to the thickest available which is a nice option to have. The only downside is cleaning is a little complicated, and it is quite large/heavy so that makes it a bit of a project, however the labor that its saving in production makes it well worth the hassle.
